MODULE ONE
NN101 - Fundamentals of Nutrition
The Fundamentals of Nutrition course offers a comprehensive overview of the field of nutrition, which leads to a study and understanding of the link between nutrition and preventive medicine.  The course explains the role of macronutrients, vitamins and minerals, and the importance of water in the diet.  It describes how certain dietary habits undermine our health and provides suggestions for overcoming these habits.  It looks at the effect of pollution on our health and the health of our planet.

NN101A - Symptomatology I
Through a diet of high nutritional quality, we can support life at every stage. This course explains the ten key components of a healthy diet, and leads the student through the changing nutritional needs of various age groups during growth and development. Students learn the health benefits of and basic guidelines for fasting and detoxification.

NN102 - Anatomy and Physiology
This course gives a general overview of the eleven body systems. It covers the structure and shape of the body and its parts, and their relationship to one another. It covers the physiological processes by which the eleven systems operate, and the nutritional symptomatology of each system.

NN103 - Symptomatology II
Analyzing symptoms relating to health is a valuable key in defining nutritional deficiencies. The student will learn the significance of symptoms as they relate to each individual. This course will assist the student in relating further learning to individual needs. 14 case studies are required by the end of the program.

MODULE TWO
NN104 - Preventive Nutrition
The prevention of degenerative diseases is becoming a major objective for many people. The student will learn how specific diets can retard or reverse the major ailments of our time: arthritis, artherosclerosis, cataracts, cancer, diabetes, high blood pressure, senility and ulcers. The student will also gain an understanding of the damage of free radicals and the benefits of antioxidants. This course focuses on digestion and elimination.

NN105 - Body-Mind-Spirit, The Connection
In the first part of the course, the student will learn every aspect of orthomolecular practice in the pursuit of mental health. In the second part, the student will discover that physical diseases have related emotional, psychological and/or spiritual links. The student will begin to understand these connections in the context of the anatomy of the human energy system - the anatomy of an individual's spirit. The journey through this course offers an enriched view of life and helps the student to identify the patterns of an individual's life and the deep interworkings of body, mind and spirit.

NN106 - Fundamentals of Business
This course provides the student with an overview of the requirements necessary to establish a practice as a Holistic Nutritionist™ or Nutritional Consultant™. It provides a  framework and practice in identification of personal and career goals, and introduces the key concepts of job search, resume preparation and interview skills. The main elements of a consulting business and of a marketing plan are reviewed, along with the legal requirements governing nutritional consultancy.

MODULE THREE
NN107 - Chemistry and Bio-Chemistry
This course is designed to introduce the student to the subjects of chemistry and biochemistry and requires no previous knowledge of these subjects. This course moves from an explanation of the structure of atoms to complex biological molecules and an explanation of how these molecules function in the body. The knowledge gained in this course will enable the student to read nutritional and health related literature in a knowledgeable manner and to discuss the issues with greater confidence.

NN108 - Cellular Biology
This course provides an overview of the five kingdoms of life, how they developed, what features are common to all kingdoms and what features are different. The student will learn the structure of the animal cell, its metabolism and the different types of cells that make up the human body. DNA and genes will also be addressed.

NN109 - Pathology and Nutrition

This course systematically presents common pathological disorders, stressing their symptoms and underlying causes, and recommending a nutritional strategy where appropriate. Upon completion of this course, the student is able to describe the categories of pathologies and their effect on the major organ systems. The student will be able to translate pathological terms into common language, recognize specific pathologies from case histories, and make nutritional recommendations based on his/her assessment.

NN110A - Lifecycle Nutrition - Pediatric
This course presents information about the immune system and the role nutrition plays in building and maintaining a healthy immune system in children of all ages. The course of study begins with pregnancy and infancy and follows child development through critical growing stages to the teenage years. The course stresses quality foods over quantity, behavior as a reflection of diet, and the long term influences of good nutrition on long term health prospects.

NN110B - Lifecycle Nutrition - Sports

This course provides information on all aspects of the relationship between nutrition and sports performance. It covers topics such as hydration, sports supplements, ergogenic aids and how to calculate optimal fluid, calorie, carbohydrate, fat, and protein requirements specific to your sport and goals. In addition, advice for vegetarian, female, young, and competitive athletes is given.

NN110C - Lifecycle Nutrition - Perspective on Aging
This course explores in detail the emotional, social, physical and spiritual factors related to successful aging. The student will learn to recognize the important elements that ensure a rewarding retirement, health in later life, and a dignified death.

MODULE FOUR
NN111 - Eco-Nutrition
This course explores the facts about metal and other elements in food, air and water and their effect on our health. The student gains insight into both the major causes of pollution, and the existing threats to both the Earth's and to man's immune systems. The student will also learn to make food choices that are wholesome and safe for everyone.

NN112 - Allergies
Many physical and psychological problems are related to allergies. This course leads the student to understand what allergy is and how it works in the body, and what steps can be taken to remove the condition permanently in a natural way.

NN113 - Alternative/Comparative Diets
There are elements common to all healthy diets. This course helps the student develop a clear understanding of the many types of diets and their therapeutic benefits or their deficiencies. The student will learn to create diets specific to a client's needs. The course explores the causes of obesity and individual strategies for weight loss.

NN114 - Nutritional Literature Research
This course teaches the student methods of assessing nutritional literature for credibility, accuracy and political biases. The student will learn to recognize the special challenges of nutritional scientific research. In this course, the student will also learn how to understand the structure and referencing of a journal paper.

PRACTICUMS
Practicum - Practicum
In addition to the regular classroom instruction in natural nutrition, 50 hours of practicum are mandatory for the student, (out of 100 practicum hours* scheduled throughout the academic year). In these sessions, the student has the opportunity to develop assessment and interview skills essential to his/her success in the field of holistic nutrition. This is done under the supervision of a qualified Holistic Nutritionist™, through presentation of case studies, role-playing, group studies and lectures by guest speakers.
