Grilled Chicken Salad with Dairy-Free Cilantro Lime Dressing

It’s salad season and grilling season! This Grilled Chicken Salad with Dairy-Free Cilantro Lime Dressing is the perfect meal on a hot summer day.

This cilantro lime dressing starts with a paleo avocado oil mayonnaise base (you can find our recipe here). This dressing is creamy with no dairy, and it’s tangy, zesty, and has a hint of sweetness. It goes perfectly with grilled chicken.

This salad features fibre and vitamins from the greens, avocado, and onions, protein from the pasture-raised chicken, and healthy fats from the homemade dressing and the avocado. It’s a well-rounded meal that will keep you full and satisfied for hours.

Dressing
Ingredients:
½ cup of avocado oil mayonnaise
Juice of 1 lime
¼ cup of fresh cilantro leaves
⅛ teaspoon of cumin
1 tablespoon of honey
½ teaspoon of garlic powder
Pinch of salt

Directions:
Blend all ingredients together in a blender until smooth. Store in an airtight container in the refrigerator for up to 1 week.

Salad
Ingredients:
1 head of lettuce, chopped
1 pasture-raised chicken breast
1 teaspoon of olive oil
Pinch of salt and pepper
1 avocado, sliced
¼ of a red onion, sliced thinly
Cilantro lime dressing from above

Directions:

  1. Heat grill to medium. Coat the chicken breast with olive oil, salt, and pepper. Grill for about 8-10 minutes on each side, or until cooked through. Let it rest for 5 minutes, then slice.
  2. To assemble the salad, layer the chopped lettuce with sliced chicken breast, sliced avocado, and sliced red onion. Drizzle on the dressing just before serving.
